Salmon Poke Bowl

A salmon poke bowl is not only delicious but is also rich in anti-inflammatory ingredients. This recipe is simple, delicious, and nutrient-packed.

For the Salmon

200g fresh salmon, diced

1 tablespoon Olive Oil

1 teaspoon Lemon Juice

 

1 teaspoon Turmeric

1 teaspoon Paprika

1 clove Garlic crushed

1 teaspoon Soy Sauce

1 teaspoon Honey

Pinch of Black Pepper

For the Bowl

1 cup cooked brown rice or quinoa

1 avocado, diced

1/2 cup edamame, shelled

1/4 cup grated carrots

Âź cup bell pepper

1/2 cucumber, sliced

Tablespoon of Pickled pink onions

2 tablespoons chopped scallions

1 teaspoon sesame seeds

Instructions:

1.Mix all ingredients and marinade the salmon for a few hours or overnight if possible

2.Pop the salmon in the air fryer at 180 for 18 mins

3.Heat the rice and assemble the vegetables - try and include some colour with your veg.

4.Arrange the cooked brown rice or quinoa in the bowl with the rice

5.Top with cooked marinated salmon

6.Sprinkle with scallions and sesame seeds.

7.Enjoy
